Food hygiene training

All staff handling food must have the necessary training and knowledge to ensure they do not compromise the safety of food whilst carrying out their duties. 

Training can be obtained by a number of methods such as on-the-job training, adequate supervision, relevant prior experience as well as attending a formal and/or accredited training course. 

It is important to note that compliance with the legal duty for training is not simply by having attended a formal training course.  Managers and staff must actively put their knowledge of food hygiene into practice in the workplace, regardless of how this has been gained.

Training Courses by the Council

The Council offers a low cost CIEH Level 2 Award in Food Safety in Catering.  This Level 2 qualification is aimed at every employee involved in the handling of food.  The course covers the four C's - chilling, cooking, cleaning and cross contamination as well as food safety management systems for food businesses.


All fees must be paid when booking

£48 (inc VAT) per attendee

£24 (inc VAT) per attendee for charity/community groups in Erewash Borough - eligibility for the reduce fee is at the council's discretion and with prior agreement


9.00am to 5.30pm- lunch and refreshments are included in the cost


Test of 30 multiple choice questions (20 out of 30 achieves a pass)

Officers from the Food Health and Safety Team teach the Level 2 Award course. Officers are qualified, experienced Environmental Health Officers so you can be confident that you will get quality training. Our officers have years of experience to share with students with many examples of good and bad practice.
